Couscous Salad with Chicken and Kato Mango Lime Dressing
Bring orange juice to a simmer in a saucepan, add couscous, olive oil & seasoning. Return to a simmer and turn off. Rest for 5 minutes to allow the couscous to swell then stir to separate grains. Transfer to a serving platter
Toss the Kato Sweet Mango & lime Dressing, parsley, cucumber, mango and chicken and spoon on top of the salad. Garnish with toasted pine nuts.
