Kato Mango Lime Dressing

Couscous Salad with Chicken and Kato Mango Lime Dressing

  • 2 ½ cups freshly squeezed orange juice
  • 3 cups of couscous
  • 1 ½ Tbsp olive oil
  • Sea salt and cracked pepper
  • ½ cup of flat leaf parsley, roughly chopped
  • 1 telegraph cucumber, finely chopped
  • 1 fresh mango, diced
  • 1 cup of cooked chicken diced or sliced
  • ¾ cup of Kato Sweet Mango & Curry Dressing
  • ½ cup of lightly toasted pine nuts

Bring orange juice to a simmer in a saucepan, add couscous, olive oil & seasoning. Return to a simmer and turn off. Rest for 5 minutes to allow the couscous to swell then stir to separate grains. Transfer to a serving platter

Toss the Kato Sweet Mango & lime Dressing, parsley, cucumber, mango and chicken and spoon on top of the salad. Garnish with toasted pine nuts.
