Beach, Bach and Barbeque Recipes
Summer holidays are about relaxing with friends and family. Summer food needs to be simple and tasty. These recipes use the minimum number of ingredients to make it easy if you are at the bach or camping. They can be quickly cooked on the BBQ, camp fire, camp oven or a conventional stove. Baby Potatoes with Kato Lentil Dhal
Serves 8 hungry people, as a side dish.
Preheat oven 180 C
2 kg baby new potatoes- scrubbed
A tub of Kato Lentil Dhal
Pinch of salt
If potatoes are larger than a walnut, parboil first.
Place potatoes in a bowl with the Kato Lentil Dhal.
Add a pinch of salt and stir until well coated.
If barbequing, wrap potatoes in a double layer of aluminium foil to form a parcel.
If roasting in oven, place potatoes and dhal in roasting dish topped with foil.
Cook parcel for about 30 minutes, or until potatoes are soft.
